In 2 tablespoons olive oil, cook 1 chopped onion and 1 crushed garlic clove. Add 800g canned tomatoes (crushed) and 500g sliced mushrooms, bring mixture to the boil. Reduce heat, simmer 15 minutes (covered). Stir 2 tablespoons fresh chopped parsley and 1/2 cup cream into the sauce. Stir through the cooked pasta and serve. Serves 4.
